Tasting
Nose
Displaying great purity, the aromatic bouquet opens with intense mineral notes reminiscent of silica, harmoniously complemented by touches of fresh citrus, particularly lemon.
Palate
The palate stands out for its remarkable liveliness and perfectly balanced structure. Carried by a beautiful acidic tension, the mouth unfolds a texture that is both mineral and finely chiselled, extending towards a finish of exceptional length.
Food and wine pairings
Thanks to its tension and minerality, this white wine pairs wonderfully with seafood. It will enhance grilled fish such as salmon or trout, as well as seafood platters and shellfish (oysters, lobster, scallops). It is advisable to avoid overly rich or creamy sauces in order to preserve the full finesse of the cuvée.
Serving and cellaring
For optimal tasting, it is recommended to serve the Chassagne-Montrachet 1er Cru "Le Cailleret" 2024 at a temperature of around 12°C. Endowed with excellent ageing potential, this wine will evolve beautifully in the cellar and can be enjoyed until approximately 2039.

The estate
The estate's history truly began in 1980 when Vincent Girardin decided to cultivate his own family vines. Firmly established in Meursault, in the heart of Burgundy, the house quickly rose to prominence thanks to its haute couture approach and its mastery of the great terroirs. Since 2012, the estate has belonged to the Compagnie des Vins d'Autrefois, led by Jean-Pierre Nié. Stylistic continuity and uncompromising quality are ensured by winemaker Éric Germain, who upholds the philosophy of minimal intervention and absolute respect for the vine.
The vineyard
The Climat from which this wine originates lies at the southern edge of the village of Chassagne-Montrachet. East-facing, the vines benefit from a venerable average age of 70 years. They thrive on shallow, very stony clay-limestone soils, dominated by outcropping Bathonian limestone. The vineyard is managed according to sustainable and environmentally respectful principles: Guyot Poussard pruning, complete absence of herbicides and insecticides, use of natural composts and high trellising to promote optimal photosynthesis.
Vinification and ageing
The grapes for the Chassagne-Montrachet 1er Cru "Le Cailleret" 2024 are harvested by hand, followed by a rigorous double sorting in the vineyard and then in the winery. Pneumatic pressing is carried out slowly and gently. After light settling, fermentations take place in French oak barrels (including 15% new wood) using indigenous yeasts. Ageing continues on fine lees for 18 months, with no bâtonnage, in order to preserve the tension of the wine. Finally, blending takes place in stainless steel vats before bottling in accordance with the lunar calendar, on a root day.
