    A generous and exceptionally delicate Chablis Grand Cru

    The Estate

    Established in 1959, the Domaine William Fèvre has, over the vintages, become an essential reference for Chablis wines. This illustrious Burgundian estate joined the Henriot group in 1998.

    Domaine William Fèvre oversees an exceptional 78-hectare vineyard including 15.9 hectares classified as Premier Cru and 15.2 hectares classified as Grand Cru de Bourgogne. Certified HVE (Haute Valeur Environnementale) since 2015, this vineyard magnifies, through its mosaic of over 90 distinct plots, all the richness and diversity of the Chablis terroir.

    The Vineyard

    «Les Clos» Domaine de William Fèvre is the largest and most famous of the Grands Crus; it is the historic cradle of Chablis wines. Sourced from a 4.11-hectare vineyard located on the heights of the appellation, the terroir, facing due south, with a soil composed of very white, dense and deep clays, rests on a limestone layer 80 centimetres down which brings typical spicy notes.

    The Vintage

    The 2023 vintage experienced a contrasting climate with a mild winter, harmless frosts, and a summer alternating heat and rain. Despite strong sanitary pressure in June, well managed by the teams, the September harvest delivered generous volumes and grapes in excellent condition.

    Winemaking and Aging

    This Chablis Grand Cru is produced using a gentle approach, with gravity-based winemaking without pumping and a brief pneumatic pressing. Winemaking in stainless steel tanks, followed by 20 months of aging including 5 to 6 months on lees in French oak barrels for 40% of the cuvée. The end of the aging is carried out in stainless steel tanks.
