    Tasting notes

    Colour
    This French white wine displays a delicate pale yellow hue in its youth, which develops into deep golden nuances over time.

    Nose
    The aromatic bouquet opens with subtle floral notes such as hawthorn and acacia, underpinned by a mineral backbone. With age, it reveals warm nuances of honey, amber and sweet spices.

    Palate
    The attack is lively and playful, revealing a mineral and particularly harmonious profile. The balance is ideal between a beautiful natural acidity and a subtle richness brought by ageing, offering a refined and approachable texture.

    Food and wine pairing

    This wine pairs perfectly with seafood, particularly sushi, as well as with freshwater fish in a white sauce or a seafood risotto. As for cheeses, it enhances pressed cooked cheeses such as gruyère, goat cheeses, or blue-veined cheeses.

    Service and storage

    To fully enjoy this Pernand-Vergelesses "Village Domaine" 2023, it is recommended to serve it at a temperature between 10 and 12°C. It can be enjoyed now or cellared and drunk until around 2028.

    Other characteristics

    Due to a minimal-intervention approach during vinification, this wine may develop a slight natural deposit in the bottle over the years, which in no way affects its tasting qualities.

    The elegance and minerality of a white Burgundy wine

    The estate

    Born in 1902 from the division of the Louis Latour estate, Poisot Père & Fils is a two-hectare family estate located in Aloxe-Corton, in Burgundy. Now run by Rémi Poisot, a former officer in the French Navy, the estate stands out for its heritage, which includes three Grands Crus and one Premier Cru. Certified High Environmental Value, the estate favours viticulture that respects biodiversity and minimal-intervention vinification, thereby revealing the authentic expression of its terroirs.

    The vineyard

    The plot dedicated to this wine is located within the Pernand-Vergelesses appellation, at the top of the "En Caradeux" slope, at an altitude of around 300 metres. Planted in 2013 on yellowish marl soils, these young vines benefit from an eastern exposure and the freshness provided by a woodland overlooking the plot. The vineyard is trained using Guyot pruning, with natural grass cover and mechanical weeding beneath the rows to preserve soil integrity.

    Winemaking and ageing

    Hand-harvested grapes in small crates are followed by gentle pneumatic whole-bunch pressing. After natural settling, alcoholic and malolactic fermentations take place spontaneously in oak barrels through indigenous yeasts. The Pernand-Vergelesses "Village Domaine" 2023 is then aged in barrels for 14 to 16 months, with light lees stirring to enrich the texture, before bottling with minimal intervention.
