    Tasting

    Colour
    The colour reveals a light to medium red hue, with a subtly pale appearance typical of this grape variety.

    Nose
    The nose opens with a bouquet of fresh red fruit dominated by tangy cherry and raspberry. It then reveals a floral dimension along with light spicy touches.

    Palate
    The palate offers a light to medium body, supported by a developed and elegant tannic structure. The tannins are soft and floral, adding brightness, while a lovely natural acidity brings an invigorating freshness that extends into a long finish.

    Food and wine pairing
    This red wine pairs well with veal or lamb sweetbreads, as well as pork fillet, as suggested by the estate. It will also complement roasted white meats, delicately prepared red meats, or fatty fish such as roasted salmon. As for cheese, a fresh local goat cheese or a soft-ripened cheese will pair perfectly.

    Service and storage
    For optimal enjoyment of this Vendanges Entières 2023, it is recommended to serve it at a temperature of between 16 and 18 degrees. Decanting is advised in its youth to allow the wine to breathe, or after a few years to separate any natural sediment. This vintage can continue to age and will be ready to drink until around 2035.

    The estate
    Located in the Loire region, Domaine Vincent Pinard is a family estate whose history spans more than twenty generations. Formally established in 1996, the estate is now run by brothers Florent and Clément Pinard. They cultivate around 17 hectares of vines according to the principles of organic and biodynamic farming. Their approach relies on minimal intervention, both in the vineyard and in the cellar, with the aim of allowing the limestone terroirs to express themselves with precision in every cuvée.

    The vineyard
    This Sancerre comes from a specific plot named La Pèlerine, covering an area of 35 ares. The vines, around 35 years old, are planted at high density on soils composed of clay and limestone, resting on a pure limestone subsoil. Located on hillsides between 240 and 275 metres in altitude, this terroir benefits from a cool semi-continental climate, conducive to balanced ripening.

    The vintage
    The year 2023 stood out for particularly high natural yields. To address this, the estate carried out very rigorous green harvesting, removing a significant portion of the crop. This choice allowed the remaining bunches to reach a remarkable level of ripeness and concentration.

    Winemaking and aging
    For this Vendanges Entières 2023, the grapes are hand-harvested and sorted twice. Fermentation takes place with whole, unstemmed bunches in a truncated wooden vat, driven by indigenous yeasts. After a gentle maceration, the wine is aged for eighteen months in used oak barrels. Racking is done without a pump, and bottling is carried out without fining or filtration.
