    Tasting notes

    Appearance
    The glass reveals an intense, brilliant ruby hue.

    Nose
    Elegant and complex, the aromatic bouquet opens on notes of black fruits such as blackcurrant. It is then enhanced by delicate floral touches reminiscent of peony and violet, underlined by subtle spicy nuances.

    Palate
    The attack is fine and delicate. The tannic structure, clearly present, proves perfectly integrated, silky and free of astringency. The whole displays a harmonious balance between alcohol and acidity, extending gracefully towards an utterly elegant finish.

    Food and wine pairings

    Thanks to its finesse and silky structure, this red wine pairs ideally with delicate and lightly seasoned dishes. It will beautifully accompany roasted poultry such as capon or poulard, a rack of veal, tender cuts of beef, venison fillets, as well as a platter of regional cheeses.

    Serving and cellaring

    To allow the Monthélie 1er cru "Champs Fulliot" 2023 to release its full aromatic complexity, decanting one hour before serving is highly recommended. Endowed with a fine balance, this wine is built for ageing and can be enjoyed until around 2038.

    The estate

    Officially founded in 1859 by Louis Henry Denis Jadot, although its winegrowing roots date back to 1826, Maison Louis Jadot is a leading institution in Burgundy, France. Based in Beaune, it strives to express the purity of terroirs through an approach that combines tradition and modernity. Today chaired by Thomas Seiter, with Thibault Gagey as managing director, the estate has belonged to the Kopf family since 1985. Certified organic since 2024, the domaine upholds a philosophy of excellence and respect for the environment.

    The vineyard

    The Climat "Les Champs Fulliot" is one of the most renowned terroirs of the Monthélie appellation. This small parcel enjoys an ideal south to south-east exposure. The vines flourish on a clay-limestone soil made up of a fine layer of red clay, 20 to 30 centimetres deep, resting directly on the bedrock. This specific geology, situated in the continuation of Volnay's famous "Clos des Chênes", brings a natural finesse and remarkable elegance to the grapes.

    The vintage

    The 2023 year in Burgundy stands out as a particularly favourable period. The weather conditions made it possible to obtain berries of remarkable quality. The warm spell that occurred in mid-August encouraged optimal concentration in the grapes while preserving an excellent natural balance. The harvest thus revealed fruit with intense colours and beautiful complexity.

    Winemaking and ageing

    Under the technical direction of Frédéric Barnier, the crafting of the Monthélie 1er cru "Champs Fulliot" 2023 rests on a careful balance between traditional methods and technological expertise. Fermentations are carried out with indigenous yeasts wherever possible, along with extended macerations and rigorous temperature control. Ageing then takes place with a very measured use of new oak barrels, in order to preserve the natural harmony and authentic expression of the terroir.
