    Tasting

    Appearance
    Clear and remarkably bright, the wine reveals a pale yellow hue tending towards light gold, enhanced by delicate silver and green highlights.

    Nose
    The aromatic bouquet opens with a lovely freshness of citrus and crisp white fruits, such as apple and pear, intertwined with white floral notes. Subtle mineral nuances reminiscent of chalk blend with discreet touches of fresh butter, almond and finely toasted notes.

    Palate
    From the first sip, the wine reveals itself as lively and carried by a beautiful acidity. The mid-palate unveils a fine texture, wrapped in a slight richness, where fruity flavours balance with mineral tension. The finish, of impressive length, extends over floral and lemony notes, elevated by a noble and delicate bitterness.

    Food and wine pairings

    This white wine from France pairs beautifully with seafood such as seared scallops, shellfish or delicate fish. It also elegantly accompanies white meats served with cream and mushroom sauces, as well as characterful cheeses like a mature goat's cheese or a young Comté.

    Serving and cellaring

    Approachable in its youth, this Saint-Aubin Village 2023 can rest in the cellar and be enjoyed until around 2031.

    The estate

    Founded in 1859 in the heart of Beaune, Maison Louis Jadot is a leading figure in Burgundy. Historically renowned for its expertise as a négociant-éleveur and vineyard owner, the house is dedicated to conveying the authentic expression of the region's terroirs. Acquired in 1985 by the American Kopf family, the estate has retained its local roots while shining on the international stage. Today led by Thomas Seiter, the house also stands out for its strong environmental commitments, working towards sustainable viticulture that respects its precious climats.

    The vineyard

    Located on the prestigious Côte de Beaune, the terroir of the Saint-Aubin appellation is defined by a hilly topography. The vines benefit from varied exposures, often facing south or southeast, as well as cooler areas. The soils, composed largely of limestone and marl, endow the grapes with singular energy and minerality.

    Winemaking and ageing

    After gentle pressing and settling, the juices of this Saint-Aubin Village 2023 begin their alcoholic fermentation in oak barrels, followed by malolactic fermentation. The wine then undergoes ageing of 12 to 15 months in barrels, with a moderate proportion of new oak and possible bâtonnage, to enrich its complexity without masking the identity of its terroir.
