Founded in 2023 in Lyon by Nicolas Verstraete, a Lyon-based gastronome, and Manon Thomas, Nivers is revolutionising the world of non-alcoholic tasting beverages. The result of eighteen months of intensive research begun in 2021, the brand rests on three distinctive pillars: a dual alcohol-free plant-based fermentation, the exclusive use of grand cru teas, and finely tuned botanical extractions. Produced entirely in France, free from synthetic additives and lightly sweetened, the Nivers cuvées offer an aromatic complexity and length on the palate comparable to great wines, specifically designed to elevate gourmet food and beverage pairings.
Nivers N°02: a complex elaboration in service of a unique herbaceous profile
The Nivers N°02 is the result of a sophisticated production process combining fermentation, maceration and botanical extraction. This cuvée draws on a base of grand cru Japanese green teas from the island of Kyushu, paired with verjus from Dordogne and a kombucha culture. Its aromatic complexity arises from the blend of extracts of raspberry leaf, yerba mate, mimosa and bladderwrack. This rich botanical composition, crafted according to the fermentation and extraction methods mastered by Nivers, achieves a herbaceous, vibrant profile with a remarkable length on the palate.
Produced in France, this naturally alcohol-free tasting beverage stands out for its complete absence of additives and its low sugar content, offering a gastronomic alternative designed to rival great wines in refined food and beverage pairings.
