Tasting
Nose
The nose reveals a beautiful floral roundness dominated by notes of jasmine and white flowers, elegantly balanced by hesperidic fragrances of bergamot and citron.
Palate
On the palate, the attack reveals a pleasant acidity at mid-palate, followed by remarkable floral persistence. The finish stands out with a slight bitterness that brings structure to the whole.
Food and tea pairings
Nivers N°05 pairs perfectly with delicately spiced dishes, a scallop carpaccio, fresh goat cheeses, roasted fruits or a vegetable terrine.
Serving and cellaring
To fully appreciate Nivers N°05, it is recommended to serve it at 14°C in a wine glass. Before opening, the bottle should be stored at room temperature or in a cellar. Once opened, it should be placed in the refrigerator and consumed within 12 days.

Founded in 2023 in Lyon by Nicolas Verstraete, a Lyon gastronome, and Manon Thomas, Nivers is revolutionising the world of non-alcoholic tasting beverages. The result of eighteen months of intensive research begun in 2021, the brand is built on three distinctive pillars: a non-alcoholic double plant-based fermentation, the exclusive use of grand cru teas, and carefully controlled botanical extractions. Produced entirely in France, free from synthetic additives and with low sugar content, Nivers cuvées offer an aromatic complexity and length on the palate comparable to great wines, specifically designed to enhance gastronomic food and beverage pairings.
Nivers N°05: showcasing a unique know-how
Nivers N°05 is the result of a sophisticated production process combining fermentation, maceration and botanical extraction. The crafting of this non-alcoholic tasting beverage harmoniously combines Grand cru white teas from China (Fujian mountains), paired with verjuice from Dordogne, a kombucha culture, as well as plant and fruit extractions (bitter orange, citron, bergamot).
Born from a know-how and from fermentation and extraction methods mastered by Nivers, this composition seduces with its flattering, floral profile.
