The elegance of a non-alcoholic beverage crafted in Lyon by Maison Nivers
Nivers: Lyon’s gastronomic non-alcoholic beverage revolution
Founded in 2023 in Lyon by Nicolas Verstraete, a Lyon-based gastronome, and Manon Thomas, Nivers is revolutionizing the world of non-alcoholic tasting beverages. The result of eighteen months of intensive research begun in 2021, the brand is built on three distinctive pillars: a double non-alcoholic plant-based fermentation, the exclusive use of grands crus teas, and expertly controlled botanical extractions. Produced entirely in France, with no synthetic additives and low in sugar, Nivers cuvées offer aromatic complexity and length on the palate comparable to great wines, conceived specifically to elevate gastronomic food-and-beverage pairings.
Nivers N°05: showcasing unique expertise
Nivers N°05 is the result of a sophisticated production process combining fermentation, maceration, and botanical extraction. The creation of this non-alcoholic tasting beverage harmoniously combines Grands crus white teas from China (Fujian mountains), paired with Dordogne verjuice, a kombucha culture. as well as plant and fruit extractions (bitter orange, citron, bergamot).
Drawing on know-how and fermentation and extraction methods mastered by Nivers, this composition charms with its flattering, floral profile.
Produced in France, this naturally alcohol-free non-alcoholic tasting beverage stands out for its total absence of additives and its low sugar content, offering a gastronomic alternative designed to rival great wines in refined food-and-beverage pairings.
