Founded in 2023 in Lyon by Nicolas Verstraete, a Lyon-based restaurateur, and Manon Thomas, Nivers is revolutionizing the world of non-alcoholic tasting drinks. The result of eighteen months of intensive research that began in 2021, the brand is built on three defining pillars: a double non-alcoholic plant-based fermentation, the exclusive use of Grand Cru teas, and precisely mastered plant extractions. Produced entirely in France, with no synthetic additives and low sugar content, Nivers cuvées offer aromatic complexity and palate length comparable to great wines, specifically designed to enhance food-and-drink pairings in gastronomy.
Nivers N°02: a complex production process serving a unique profile
Nivers N°02 is the result of a demanding production process combining fermentation, maceration, and plant extraction. This cuvée is based on Grand Cru teas from Japanese green tea from the island of Kyushu, combined with verjus from Dordogne and a kombucha culture. Its aromatic complexity comes from blending extracts of raspberry leaves, mate, mimosa, and fucus. This rich plant-based composition, developed using Nivers’ controlled fermentation and extraction methods, creates an herbal, vibrant profile with remarkable length on the palate.
Made in France, this non-alcoholic tasting drink, which naturally contains no alcohol, stands out for its complete absence of additives and its low sugar content, offering a gastronomic alternative designed to compete with great wines in refined food pairings.
