    Description

Characteristics and tasting tips for the Saint-Aubin 1er cru "En Remilly" 2024 by Vincent Girardin

    Tasting

    Nose
The bouquet is strikingly elegant, driven by orchard white fruit aromas such as crisp green apple and Bosc pear. This fruity core intertwines harmoniously with delicate floral notes of acacia, all underpinned by a persistent minerality reminiscent of flint.

    Palate
On the palate, this medium-bodied wine unfolds with a lovely vertical energy, enlivened by a vibrant, lemony acidity. The oak ageing is discreet, lending a subtle thread of toasted almond that integrates seamlessly without masking the wine's saline heart. The finish stretches out at length, leaving a clean, purifying impression of crushed limestone and sea salt.

    Food and wine pairing

Thanks to its tension and salinity, this white wine is an ideal match for seafood such as fine fish, scallops or grilled lobster. It also elevates delicate white meats and mature goat's cheeses, as well as dishes with pure flavours such as raw fish ceviche or grilled Mediterranean vegetables.

    Serving and cellaring

To appreciate the full complexity of this wine, we recommend serving it at a temperature between 10 and 12°C. Light decanting upon opening can be beneficial to fully release its aromatic palette.

    The estate

Founded in 1980 by Vincent Girardin with two hectares of family vines in Santenay, the house quickly established itself as an essential reference in Burgundy. Based in Meursault, it stands out for its hybrid estate-négociant model and a philosophy focused on the purity of terroirs and respect for the environment. Since 2012, the estate has belonged to the Compagnie des Vins d'Autrefois, chaired by Jean-Pierre Nié. The technical team, led by Éric Germain, upholds the house's exacting standards across a re-established vineyard of 33 hectares.

    The vineyard

The "En Remilly" climat enjoys a privileged geographical position in the commune of Saint-Aubin, just behind the famed Montrachet. Facing due south at mid-slope and located at the mouth of a combe, the vines, around 50 years old, benefit from excellent ventilation. They thrive on shallow, very stony soils dominated by limestone with hints of marl and clay. The vineyard is managed along biodynamic principles, banning herbicides in favour of regular ploughing and natural composts, with rigorous green harvesting to control yields.

    Winemaking and ageing

The grapes for the Saint-Aubin 1er cru "En Remilly" 2024 are harvested by hand and carefully sorted directly in the vineyard. After gentle pneumatic pressing and light settling, the musts begin alcoholic and malolactic fermentation using indigenous yeasts and bacteria. The wine is aged on fine lees for around 15 months in large 500-litre French oak barrels, only 10% of which are new, in order to preserve the brilliance of the fruit. Finally, blending and bottling are carried out in accordance with the lunar calendar.
