Nose
Dominated by citrus and balsamic herb fragrances, the nose reveals a subtle hint of sweetness reminiscent of a lemon-mint candy.
Palate
On the palate, delicate notes of white flowers blend with refined spices such as ginger, juniper, kaffir lime, galangal and white pepper. The "crunchy" texture is enhanced by lively and dynamic bubbles.
Ageing potential
This Kombucha can be cellared for approximately three years.
Refined pairings
Seafood, grilled fish or citrus-based and dairy desserts make refined pairings with this cuvée, which can also be used in the creation of refreshing cocktails.

Ama Brewery is revolutionising the world of beverages with its naturally sparkling tea-based drinks, brewed in the heart of the Basque Country. Low in alcohol, elegantly sparkling and rich in complex flavours, these unique creations marry terroir with artisanal expertise.
Born from a collaboration between gastronomic chefs, winemakers, scientists and Henrietta Lovell, a tea expert, Ama offers a sophisticated alternative to traditional beverages. Using premium teas and herbs along with pure Basque spring water, each infusion is fermented thanks to the SCOBY, a symbiotic culture of bacteria and yeasts that ensures an alchemical transformation.
Cuvée Bi by Ama Brewery: the sophistication of Kombucha
The Cuvée Bi by Ama Brewery is a naturally sparkling beverage, refined and low in alcohol (1.5%), which reinvents kombucha for lovers of elegant novelties. This cuvée is crafted with pure water from the Izarraitz massif in the Spanish Basque Country and wild lemongrass from the Uva Highlands in Sri Lanka. The lemongrass, hand-harvested by the Amba estate, is sun-dried to release its unique essential oils.

Aged in bottle for 6 months.
