Delicate pairings
This cuvée pairs perfectly with soft cheeses, pork loin, poultry, beef marrow, dark chocolate, or honey. It is equally suited to aperitif service, enjoyed at the table, or alongside desserts.
Serving and cellaring
It is recommended to serve this fermented beverage between 9 and 11°C in a white wine glass. Open gently without shaking to preserve the bubbles. The natural sediment at the bottom of the bottle may be served or left behind. This cuvée can be cellared for several years, allowing the bubbles to become finer and the aromas to gain depth.

The estate
Ama Brewery was born from the meeting of three enthusiasts in the Basque Country: Dani Lasa, former chef at the two-Michelin-star restaurant Mugaritz, Ramon Perisé, head of research and development at Mugaritz then Arantzeria, and Sancho Rodríguez, winemaker at Granja Remelluri. Based in San Sebastian, the brewery produces exceptional fermented beverages through an innovative approach that combines culinary expertise with natural fermentation techniques. Using spring water from the Izarraitz Massif and fine teas selected with Henrietta Lovell of The Rare Tea Company, Ama Brewery has created a new category of bottle-aged fermented drinks, handled with the rigor reserved for fine wines.
A kombucha made with meticulous craftsmanship
This fermented beverage is made from Milk Oolong Golden Lily tea, a rare variety grown west of Taitung in Taiwan. This tea, also known as blue tea, sits halfway between green tea and black tea, developing naturally milky, creamy aromas. It is blended with green tea in the recipe, along with pure spring water from the Basque Country.
This Golden Lily Milk Oolong Tea cuvée is produced using the pétillant naturel method, a natural in-bottle fermentation technique. Live cultures transform sugars in the presence of the infused teas in naturally sourced water. This kombucha is then aged in bottle without pasteurization, allowing its organoleptic characteristics to evolve continuously over time.
