A kombuchka brewed in the Basque Country, marked by refinement and balance
Ama Brewery: the art of brewing innovation
Ama Brewery is revolutionising the world of beverages with its naturally sparkling tea-based drinks, brewed in the heart of the Basque Country. Low in alcohol, elegantly sparkling and rich in complex flavours, these unique creations blend terroir with artisanal expertise.
Born from a collaboration between gastronomic chefs, winemakers, scientists and Henrietta Lovell, a tea expert, Ama offers a sophisticated alternative to traditional beverages. Using premium teas and herbs along with pure Basque spring water, each infusion is fermented thanks to SCOBY, a symbiotic culture of bacteria and yeast, the guarantor of an alchemical transformation.
Hiru by Ama Brewery: the elegance of exceptional teas
A new expression of kombucha, the Hiru cuvée combines two teas (green and white) grown in the African state of Malawi.
The family-run Satemwa estate produces an artisanal green tea inspired by Japanese tradition and a Peony white tea, both from seeds that travelled from Fujian in China to the remote mountains of East Africa, via the Royal Botanic Garden Edinburgh.
Ageing
Aged in bottle for 6 months.
