Tasting notes and advice for Bi d’Ama Brewery

    Tasting

    Nose
Dominated by citrus and balsamic herb aromas, the nose reveals a subtle touch of sweetness reminiscent of a lemon-mint candy.

    Palate
On the palate, delicate notes of white flowers mingle with refined spices such as ginger, juniper, kaffir lime, galangal and white pepper. The "crisp" texture is elevated by lively, dynamic bubbles.

    Cellaring potential

This kombucha can be cellared for about three years.

    Refined pairings

Seafood, grilled fish, as well as citrus-based or dairy desserts make refined pairings with this cuvée, which can also be used in the creation of refreshing cocktails.

The texture and aromatic palette of a kombucha brewed in the Basque Country

Ama Brewery: the art of brewing innovation

Ama Brewery is revolutionizing the world of beverages with its naturally sparkling tea-based drinks, brewed in the heart of the Basque Country. Low in alcohol, elegantly effervescent and rich in complex flavors, these unique creations combine terroir with artisanal craftsmanship.

Born from a collaboration between fine-dining chefs, winemakers, scientists and Henrietta Lovell, a tea expert, Ama offers a sophisticated alternative to traditional drinks. Using premium-quality teas and herbs, along with pure Basque spring water, each infusion is fermented thanks to the SCOBY, a symbiotic culture of bacteria and yeast, ensuring an alchemical transformation.

Bi cuvée by Ama Brewery: kombucha sophistication

The Bi cuvée by Ama Brewery is a refined, naturally sparkling, low-alcohol beverage (1.5%) that reinvents kombucha for lovers of elegant new discoveries. This cuvée is crafted with pure water from the Izarraitz massif in the Spanish Basque Country and wild lemongrass from the Uva Highlands in Sri Lanka. The lemongrass, hand-harvested by the Amba estate, is sun-dried to release its unique essential oils.

    Aging

    Bottle-aged for 6 months.
