This naturally sparkling drink pairs harmoniously with fresh mozzarella, quality butter or cereals. It also goes wonderfully with artichokes, crispy bacon, duck or even white chocolate. Perfect as an aperitif, it is equally suited to a meal or a celebration as an alternative to champagne.
Serving and cellaring
To fully enjoy N°5 Jasmine Silver Neddle, serve it at a temperature between 9 and 11°C in a white wine glass. Handle the bottle carefully without shaking it and open it gently. A natural deposit of lees may be present at the bottom of the bottle and can be served or left behind according to preference. This sparkling drink can be cellared for several years, further developing its complexity.
An exceptional kombucha from Spain’s Basque Country
The estate
Ama Brewery Spain was born in the heart of San Sebastián, in Spain’s Basque Country, from the meeting of three fermentation artisans. Dani Lasa and Ramon Perisé, formerly of the two-Michelin-starred restaurant Mugaritz, join forces with winemaker Sancho Rodríguez of Granja Remelluri and tea expert Henrietta Lovell. Together, they create a new category of naturally fermented beverages made from exceptional teas and pure water from the Alzola spring. Their pét-nat tea, aged on lees for at least six months without pasteurization, blends gastronomic expertise, winemaking know-how and responsible sourcing.
A kombucha with Chinese origins
The N°5 Jasmine Silver Neddle comes from Fuding, in China’s Fujian province, a renowned terroir for producing the most tender and delicate spring buds. These young white tea shoots are then scented using an ancestral method with fresh jasmine flowers for six consecutive nights. Pure spring water from Spain’s Basque Country completes this exceptional blend, forming the base of this unique kombucha.
Production
N°5 Jasmine Silver Neddle is crafted according to the ancestral pétillant naturel method, favoring natural fermentation. After being scented with fresh jasmine flowers for six consecutive nights, the tea is blended with Basque spring water and live cultures. The beverage is then bottle-aged on lees, allowing its aromatic complexity and finesse to develop. This artisanal approach, without pasteurization, respects the integrity of the ingredients and encourages the product’s harmonious evolution over time.
