Pale straw-yellow hue enlivened by fine, persistent bubbles that attest to a well-controlled natural fermentation.
Nose
The bouquet reveals delicate aromas of pear and papaya, accompanied by floral notes of violet. Subtle touches of bubble gum and white tea round out this refined aromatic palette.
Palate
The attack reveals an elegant floral sweetness, followed by candied fruit and a vibrant acidity that brings freshness and energy. The whole offers a fruity, floral, sparkling profile with lovely liveliness.

N°405 White Tips pairs perfectly with steamed seafood, chilled vegetable cream soups, baked white fish, soft-ripened cheeses, figs served with fresh cheese, or even savory-style desserts. Serve between 9 and 13°C in a white wine glass. Ideal as an aperitif, at the table, or for celebrations. Open carefully to preserve the bubbles and do not shake the bottle.
An organic kombucha from the Spanish Basque Country
Ama Brewery, a pioneering House
Founded in Irun, in the Spanish Basque Country, Ama Brewery was born from the initiative of Ramón Perisé and Dani Lasa, former collaborators of the two-Michelin-star restaurant Mugaritz, joined by winemaker Sancho Rodríguez. These current owners have transformed a craft project in San Sebastián into an innovative research and development facility. Their specialty: tea pét-nats, fermented beverages that fuse the principles of kombucha and the traditional ancestral winemaking method. Using the exceptional water from the Alzola spring, sourced from the Izarraitz massif, and rigorously selected organic teas, they produce micro-batches of 280 bottles aged on lees for at least one year, thus creating a unique gastronomic category.
N°405 White Tips, an exceptional white tea pét-nat
N°405 White Tips is made from organic Chinese white tea Cui Min, grown on the Qingshan peninsula, in Hunan province, at an altitude of 750 meters. This 141-hectare certified organic plantation is located on a remote mountainous island, accessible only by boat, where 165 residents live and 85 permanent and seasonal employees work. The farm follows FairBioTea guidelines and is managed by supervisors trained to Demeter and UTZ standards.
The production pairs this exceptional white tea with organic green tea, natural mineral water organic sugar, and live cultures for fermentation. Bottled in 75cl bottles, this Kombucha is an innovative gastronomic creation that transcends traditional categories, offering a refined alternative for lovers of natural fermented beverages.
