Tasting
Appearance
A pale sage hue enhanced by elegant and delicate effervescence.
Nose
Intense and refined, the nose opens on a captivating floral bouquet blending notes of honey, acacia and white flowers. Its aromatic complexity intensifies over time, revealing ever deeper nuances.
Palate
On the palate, the texture proves lively and crisp. With ageing, the bubbles become finer while the texture gradually softens, offering a tasting experience that evolves towards greater complexity and depth.
Food and kombucha pairings
This natural sparkling drink pairs harmoniously with fresh mozzarella, quality butter or grains. It also accompanies artichokes, crispy bacon, duck or even white chocolate beautifully. Perfect as an aperitif, it suits a meal just as well as a celebration as an alternative to Champagne.
Serving and cellaring
To fully appreciate the N°5 Jasmine Silver Neddle, it should be served at a temperature between 9 and 11°C in a white wine glass. Handle the bottle with care without shaking it and open it gently. A natural lees deposit may be present at the bottom of the bottle, which can be served or kept aside according to preference. This sparkling drink can be cellared for several years, thereby developing its complexity.
An exceptional kombucha from the Spanish Basque Country
The estate
Ama Brewery was born in the heart of San Sebastián, in the Spanish Basque Country, from the encounter between three artisans passionate about fermentation. Dani Lasa and Ramon Perisé, formerly of the two-Michelin-starred restaurant Mugaritz, joined forces with winemaker Sancho Rodríguez of Granja Remelluri and tea expert Henrietta Lovell. Together, they created a new category of naturally fermented beverages crafted from exceptional teas and the pure water of the Alzola spring. Their pét-nat teas, aged on lees for at least six months without pasteurisation, blend gastronomic expertise, winemaking know-how and responsible sourcing.
A kombucha with Chinese origins
The N°5 Jasmine Silver Neddle comes from Fuding, in China's Fujian province, a terroir renowned for producing the most tender and delicate spring buds. These young white tea shoots are then scented according to an ancestral method with fresh jasmine flowers over six consecutive nights. Pure spring water from the Spanish Basque Country completes this exceptional blend, thus creating the base of this unique kombucha.
Production
The N°5 Jasmine Silver Neddle is crafted according to the ancestral pétillant naturel method, favouring natural fermentation. The tea, after being scented with fresh jasmine flowers over six successive nights, is blended with Basque spring water and live cultures. The drink is then aged in bottle on its lees, allowing the development of its aromatic complexity and finesse. This artisanal, unpasteurised approach respects the integrity of the ingredients and promotes a harmonious evolution of the product over time.
