Tasting
Appearance
The wine displays a straw-yellow hue enhanced by golden reflections, animated by delicate and persistent effervescence.
Nose
The bouquet reveals aromas of fresh fruit, notably pear and apple, complemented by a subtle floral touch.
Palate
On the palate, a fine and creamy mousse envelops the senses. The sweetness is harmoniously balanced by a beautiful refreshing acidity that brings liveliness to the whole.
Food and wine pairings
This Blanc de Blancs is a wonderful match for a vegetable samosa as an aperitif. It also pairs perfectly with a lobster stew with baby vegetables, a lamb curry served with cheese naan, a veal blanquette, Chaource cheese on toast, or an octopus and veal sweetbread pâté en croûte.
Serving and cellaring
To fully appreciate this Blanc de Blancs Chavin, it is recommended to serve it at a temperature between 8 and 10°C. This cuvée can be cellared until around 2028.

The estate
Founded in 2010 by Mathilde Boulachin and Fabien Gross, Chavin has established itself as an innovative trading House based in Béziers. With around fifty hectares of vines grown under organic farming, Chavin stands out for its specialisation in premium alcohol-free wines.
The vineyard
This alcohol-free beverage is crafted from a rigorous selection of Chardonnays, the iconic grape variety of the great French white wines. The grapes come from vines cultivated under organic farming, ensuring the quality and authenticity of the aromas.
Winemaking and aging
The Blanc de Blancs Chavin is produced using a dealcoholisation process by vacuum distillation at low temperature. This innovative method preserves the quality of the wine as well as its original aromas. Once dealcoholised, the wine is carbonated to give it its characteristic effervescence.
