    The NV Brut Nature Blanc de Blancs Premier Cru is a very pretty, exotic wine. Tangerine oil, spice, dried flowers and hazelnut are all very nicely lifted. Usually the Brut Nature is pretty stark in profile, but in this release it is quite aromatic and light on its feet. I prefer the Extra Brut version for its greater freshness. Disgorged: April, 2021.

    Tasting Notes

    Appearance
    This wine reveals a pale, luminous yellow hue, enlivened by a fine and remarkably steady stream of bubbles.

    Nose
    The aromatic bouquet opens with floral and citrus notes, blending white flowers with lemon and zest. It then develops nuances of white-fleshed fruits such as pear, peach and apricot, rounded out by subtle pastry, brioche and occasionally mint notes.

    Palate
    Full of energy, the palate offers a refined texture and a firm structure. The attack is very dry and lively, carried by bright acidity and crisp fruit flavours. The whole is enhanced by a superb chalky minerality that lingers into a long, saline finish infused with citrus.

    Food and Wine Pairings
    Ideal for awakening the palate at the start of a meal, this cuvée pairs beautifully with seafood. It goes perfectly with seafood platters, oysters, raw shellfish, as well as fish tartare or sushi.

    Serving and Cellaring
    The non-vintage Blanc de Blancs Brut Nature Premier Cru can be enjoyed in its youth to appreciate its liveliness, or cellared for a few years to develop further complexity.

    The Pure Expression of the Vertus Terroir by Veuve Fourny & Fils

    The Estate
    Founded in 1856 in Vertus, at the heart of Champagne, the House of Veuve Fourny & Fils is now run by brothers Charles-Henry and Emmanuel Fourny. Representing the third generation, they took over the family estate in the 1990s. This house stands out for its exclusive focus on premier cru-classified terroirs and its rigorous environmental approach. Certified Haute Valeur Environnementale level 3, the estate cultivates excellence through a historic massale selection, yielding wines of remarkable purity.

    The Vineyard
    The grapes come exclusively from plots classified as premier cru, mainly located on the Vertus terroir in Champagne. The vines, over forty years old (and up to sixty years old for some plots dedicated to this wine), thrive on rendzina soils resting on a chalky subsoil. The estate practises highly environmentally conscious viticulture, entirely excluding the use of copper and insecticides in favour of organic fertilisers. The vines are grafted onto 41B rootstock.

    The Blend
    This cuvée is the result of a blend combining three consecutive vintages, complemented by around 20% reserve wines to ensure the consistency of style of this Brut Champagne.

    Winemaking and Ageing
    To craft the Blanc de Blancs Brut Nature Premier Cru, only the juice from the first pressing (the cuvée) is retained. Vinification takes place in tanks (75%) and oak barrels (25%). The base wines rest on their lees for seven months before bottling. The second fermentation and ageing then take place on lees for around thirty months in 19th-century cellars, benefiting from a low and constant temperature.
