A gastronomic champagne from Veuve Fourny & Fils
The estate
Founded in 1856, the House of Veuve Fourny & Fils is a family-run estate located in Vertus, at the heart of Champagne. Now led by the fifth generation, represented by brothers Emmanuel and Charles-Henry Fourny, the estate cultivates vines classified as Premier Cru. Renowned for its artisan winegrower approach and strong environmental commitment, the house is also distinguished by its historic monopole dating back to 1930, the Clos Faubourg Notre-Dame. It crafts pure, mineral, haute-couture wines.
The vineyard
The grapes come exclusively from the Vertus Premier Cru terroir, in Champagne. The vines, averaging 50 years of age, thrive on poor soils composed of rendzina over chalk. The estate practices highly environmentally friendly viticulture, certified High Environmental Value (HVE) level 3, banning insecticides and copper, and favoring organic fertilizers as well as grass cover.
The blend
This Extra-Brut cuvée is made from an equal blend (50% each) of two consecutive vintages.
Winemaking and aging
The production of the non-vintage Cuvée "R" Blanc de Blancs Extra-Brut Premier Cru relies exclusively on first-press juices. Vinification takes place entirely in small oak vessels. The wine is then aged for 18 months on lees in barrels, followed by an extended aging period of at least four years on lees in bottle, deep within the estate's 19th-century cellars, at a low and constant temperature.
