Appearance
This wine reveals a brilliant golden hue, animated by fine, steady bubbles.
Nose
The aromatic bouquet opens with a burst of fruity freshness combining zesty lemon and crisp green apple. These are joined by a pronounced chalky minerality along with indulgent pastry notes of warm brioche and toasted almonds.
Palate
Wonderfully pure, the palate offers beautiful saline tension and a delicately creamy texture. The structure is dynamic and refreshing, extending into a long, mineral-driven finish.
Food and Wine Pairings
Perfect from the aperitif onward, this cuvée pairs beautifully with seafood. It will elevate oysters, scallop carpaccio, white fish sashimi, or delicately roasted fish such as turbot with brown butter.
Serving and Cellaring

The Estate
The story of the House of Veuve Fourny & Fils began in 1856 in Vertus, at the heart of Champagne. Today, this family estate is run by brothers Charles-Henry and Emmanuel Fourny, who represent the fifth generation. At the helm of roughly twenty hectares of vineyards rooted exclusively in the terroir of Vertus, they craft wines of remarkable precision. Certified High Environmental Value, the House stands out for its rigorous plot-by-plot approach and its commitment to preserving the pure expression of its chalky soils through environmentally responsible practices.
The Vineyard
The grapes come exclusively from the Vertus Premier Cru appellation, located in the Côte des Blancs. The plots, planted midway up the slope, sit on rendzina soils over exposed chalk. This Champagne vineyard is made up of old vines over 50 years old, resulting from a meticulous massale selection initiated in the 1930s. Cultivated according to sustainable farming principles, these vines are pruned short to limit yields and encourage concentration in the berries.
The Vintage
The 2017 vintage proved relatively uneven across the region, but weather conditions were particularly favorable for terroirs ideally situated on chalk, such as those in Vertus.
Winemaking and Aging
The Monts de Vertus Blanc de Blancs Premier Cru 2017 is made exclusively from the first pressing juices. Vinification takes place entirely in tanks, without filtration. The wine first spends seven months on lees before bottling. It then undergoes extended aging of at least five years on lees in the estate's historic 19th-century cellars, benefiting from a consistently low temperature.
