    Tasting

    Appearance
    The wine reveals a deep ruby hue with violet reflections, reflecting vibrant youth and lovely freshness.

    Nose
    The bouquet opens with aromas of red fruits, notably cherry and raspberry, accompanied by subtle spicy and floral notes. Nuances of dark tobacco and coffee further enrich the aromatic palette.

    Palate
    The palate seduces with its velvety texture and lively acidity, which harmoniously balances the natural sweetness of the fruit. The finish stands out for its persistent lightness and radiant freshness.

    Food and wine pairings

    This dealcoholised Pinot Noir pairs perfectly with chicken quesadillas, a traditional pot-au-feu or roasted aubergines with mushrooms. It also goes well with Peking-style lacquered duck, a beef carpaccio with light mustard, or a farmhouse Saint-Nectaire.

    Serving and cellaring

    To fully appreciate the Chavin Pinot Noir 2023, it is recommended to serve it between 8 and 10°C. Cellaring potential until around 2026.

    A fruity and balanced alcohol-free Pinot Noir

    The estate

    Founded in 2010 by Mathilde Boulachin and Fabien Gross, Chavin has established itself as an innovative trading House based in Béziers. With around fifty hectares of vines cultivated using organic farming methods, Chavin stands out for its specialisation in premium alcohol-free wines.

    The vineyard

    This alcohol-free beverage comes from Pinot Noir vines cultivated in Occitanie, in the south of France. The vineyard, managed according to the principles of organic farming, benefits from the Mediterranean climate, ideal for the optimal ripening of the grapes.

    Winemaking and aging

    The Chavin Pinot Noir 2023 is produced using a low-temperature vacuum distillation process. This method preserves the quality of the wine and its original aromas while removing the alcohol. No aromas are added during the process.
