    Description

Characteristics and Tasting Tips for Chavin Pinot Noir 2024

    Tasting notes

    Colour

The wine shows a vivid, brilliant ruby red with luminous highlights.

    Nose

The nose is fine and delicate. It opens with fresh red fruit, above all cherry and raspberry, at times strawberry or redcurrant. These are joined by subtle spicy and toasty touches, such as sweet pepper, cinnamon and light coffee, along with hints of forest floor.

    Palate

The attack is supple and harmonious. The structure, light to medium, rests on fine, silky tannins. Cherry dominates, extended by notes of liquorice. Freshness lends definition to the whole and leads to a persistent finish.

    Food and Wine Pairing

This alcohol-free Pinot Noir pairs well with poultry and smoked meats, such as smoked duck. It also suits mushroom-based dishes, for example a Wellington, or a glazed ham.

    The estate

Founded in 2010 in Béziers, in the Hérault, Maison Chavin is a French négociant house that has placed alcohol-free wine at the heart of its project. It was created by Mathilde Boulachin, originally from Champagne, who is its founder and director. Rather than working its own vineyard plots, the house selects base wines. These are vinified using classic methods, then dealcoholised. A pioneer in this segment, it has a presence in many international markets.

    Vinification and ageing

The Chavin Pinot Noir 2024 is crafted from base wines of the 2024 vintage, chosen for their freshness and aromatic intensity. These wines are first vinified using classic methods. The alcohol is then removed by vacuum evaporation, without pasteurisation. This process aims to preserve the wine's sensory characteristics.
