    Decanter

    The superb Jadot Chevalier Demoiselles bottling is often my favourite white in their cellar. The 2022 vintage enchants with concentrated aromas of nectarine and passionfruit, with notes of linden flowers, hazelnut, and flint. The texture is compact and tightly wound with freshness, yet there is no lack of substance here, and the wine lingers impressively on the finish. This wine deserves at least five years in the cellar before opening and should drink well for at least 30 years after the vintage.

    Appearance
    The wine reveals a pale, luminous golden hue.

    Nose
    The aromatic bouquet opens on smoky and mineral notes, complemented by delicate floral touches. Upon aeration, it displays remarkable complexity, with aromas of pear, crisp stone fruits, white flowers, toasted bread and iodine.

    Palate
    Structured and full, the palate retains great freshness thanks to a well-balanced acidity. Flavours of vanilla and almond paste intertwine with sappy notes, leading to a long, persistent finish of remarkable mineral precision.

    Food and wine pairings

    This white wine pairs beautifully with scallops, lobster Thermidor or delicate-fleshed fish such as turbot and sea bream. It also matches wonderfully with foie gras-stuffed poultry or a selection of aged cheeses.

    Serving and cellaring

    To fully appreciate this Grand Cru, it is recommended to serve it at a temperature between 12 and 14°C. Endowed with significant ageing potential, it will start to reveal itself from 2027 and can be cellared until around 2048.

    The mineral precision and complexity of a Chevalier-Montrachet white wine

    The estate

    Founded in 1859 by Louis Henry Denis Jadot, the Louis Jadot House is an emblematic figure of the Burgundy wine region. Based in Beaune, the estate oversees a vast vineyard of approximately 250 hectares spread across the most prestigious appellations. Today owned by the American Kopf family and chaired by Thomas Seiter, the estate stands out for its distinctive label bearing the image of Bacchus and for its environmental commitment, embodied by an organic certification obtained in 2024 for its own plots.

    The vineyard

    The "Les Demoiselles" plot, covering 0.51 hectare, lies within the Chevalier-Montrachet appellation. Facing south and south-east, the vines flourish at an altitude ranging between 265 and 290 metres. The terroir rests on a Jurassic geological substrate, characterised by fine, stony soils known as rendzinas. These lie over limestone marls that provide exceptional drainage and give the wine its mineral backbone.

    Winemaking and ageing

    The harvest is carried out by hand in small crates. After careful sorting, the grapes undergo gentle pressing. Fermentation takes place in oak barrels, one third of which are new. The wine then benefits from an extended ageing of around 15 months on fine lees before bottling, a method that fosters textural complexity while limiting oxidation.
