Characteristics and Tasting Notes for Mélanie Pfister's Breit Extra Brut

Tasting

Nose
The bouquet reveals brioche aromas from yeast autolysis, while maintaining a fruity and fresh expression. This aromatic complexity results from the harmonious blend between the finesse of Chardonnay and the generosity of Pinot Blanc and Auxerrois.

Palate
On the palate, this extra brut crémant d'Alsace displays a well-balanced structure, combining freshness and vinosity. The low dosage, made possible by the ripeness of the grapes and the long aging, highlights the vinous character of this cuvée.

Food and Wine Pairing

Perfect as a festive aperitif, this cuvée also elegantly accompanies a complete meal, from appetizers to the cheese platter. It pairs particularly well with lean fish, shellfish, and poultry.

A fresh and well-balanced crémant d'Alsace

The Estate

Created in 1780 in Dahlenheim, Alsace, Domaine Pfister spans 10 hectares of clay-limestone soils. Mélanie Pfister, the current owner since 2008, is the first woman to lead this eight-generation family estate. With degrees in agronomy and oenology, she converted the estate to organic farming in 2015 and then to biodynamic practices in 2021. Co-founder of the Divines d'Alsace association, she embodies the Alsatian wine revival by combining family tradition and ecological innovation.

The Vineyard

"Breit Extra Brut" is a crémant d'Alsace named after the Hangenbreite lieu-dit, meaning "the wide slope." This vineyard on a steep slope with marly-limestone soils offers ideal conditions for the expression of an exceptional Alsatian terroir.

Winemaking and Aging

Manual harvesting precedes whole-bunch pressing. Alcoholic and malolactic fermentations take place in temperature-controlled stainless steel tanks. After aging on fine lees until bottling, the Breit Extra Brut undergoes a second fermentation according to the traditional method, followed by aging on the lees for more than 24 months, giving this cuvée its exceptional complexity and finesse.

Grape Varieties

Chardonnay (60%), Pinot Blanc (20%) and Auxerrois (20%)
